Fish Head Noodles

Ingredients:

600 g fish head, washed and cleaned. Cut into 8 – 10 pieces
salt and pepper
2 tbsp cornflour

Enough oil for deep-frying

50 g ginger, sliced thinly
1 tsp sesame oil
1.5 litre chicken stock + 10 grains of peppercorn
100 g salted cabbage (kiam chye), soaked for ½ hour and sliced
2 tomatoes cut into wedges
150 ml F&N Evaporated Milk
200 g thick rice noodles, blanched in hot water till tender

Garnishing: Spring Onion and coriander leaves

Method:

1. Season fish with salt and pepper for ½ hour. Sprinkle cornflour and toss well.
2. Heat enough oil and deep fry fish pieces till golden. Drain.
3. With 2 tbsp oil and sesame oil, fragrant ginger and pour in the stock and
peppercorn.. Add salted cabbage and tomatoes. Allow to simmer for a few mins.
4. Lower in noodles and fish pieces. Lastly pour in F&N Evaporated Milk. Give it
a quick boil and serve immediately. Garnish.

Mee Sup Kepala Ikan

Bahan-bahan:

600 g kepala ikan, dicuci dan bersihkan. Dipotong 8-10 bahagian
garam dan lada sulah
2 sb tepung jagung

Minyak untuk menggoreng

50 g halia, dipotong nipis
1 sb minyak bijan
1.5 liter stok ayam + 10 biji lada hitam
100 g kobis asin (kiam chye), rendam ½ jam dan dipotong
2 tomato, dipotong baji
150 ml Susu Sejat F&N
200 g laksa/beehoon, celur didalam air panas hingga lembut

Hiasan: Daun bawang dan daun ketumbar

Cara Membuat:

1. Perap ikan bersama garam dan lada sulah selama ½ jam. Taburkan tepung jagung dan
toskan.
2. Panaskan minyak untuk menggoreng hingga ranggup dan kuning keemasan. Toskan
3. Tumiskan halia bersama 2sb minyak bijan hingga wangi. Masukkan stok ayam dan
lada hitam. Masukkan kobis asin dan tomato. Biarkan merenih sebentar.
4. Masukkan laksa / beehoon dan potongan kepala ikan. Masukkan Susu Sejat F&N.
Biarkan mendidih sebentar, hias dan hidang segera.
