Steamed Fish with Soohoon

Ingredients:

50 g soohoon, soaked and drained
2 sprigs coriander leaves, including roots
1 tsp Szechwan peppercorn, crushed [A]
½ tsp pepper [A]
1 tbsp fish sauce [A]
1 tbsp chicken granules [A]
150 ml water [A]
1 tbsp garlic oil [A]
500 g – 600 g whole fish, washed and clean. Marinade with ½ tsp salt
150 ml F&N Evaporated Milk

Garnishing: Coriander Leaves and bird chilies

Method:

1. Combine coriander roots together with (A) into a saucepan. Allow to simmer for 5
mins. Add in F&N Evaporated Milk. Simmer
2. Place soohoon at the base of a platter with fish on top. Steam in steamer or wok for
5 – 7 mins. Discard the water on platter.
3. Pour in (1) and allow to steam for another 3 – 4 minutes. Garnish and serve.

Ikan Kukus dan Suhun

Bahan-bahan:

50 g suhun, direndam dan toskan
2 tangkai daun ketumbar, dengan akarnya
1 st lada Szechwan , ditumbuk kasar [A]
½ st lada sulah [A]
1 sb sos ikan [A] A
1 sb serbuk pati ayam [A]
150 ml air [A]
1 sb minyak bawang putih [A]
500 g – 600 g seekor ikan, bersihkan. Perap bersama ½ st garam
150 ml Susu Sejat F&N

Hiasan: Daun ketumbar dan cili padi

Cara Membuat:

1. Satukan akar ketumbar bersama bahan (A) dan biarkan renih selama 5 minit.
Masukkan Susu Sejat F&N dan biarkan renih.
2. Lapiskan suhun di atas pinggan hidang dan diikuti dengan ikan di atas. Kukus selama
5-7 minit. Buangkan air dalam pinggan.
3. Tuangkan (1) kedalam dan kukus selama 3 – 4 minit lagi. Hiaskan dan hidang segera.
